The char process. One of the most important and fundamental processes in this art. It is charactrized by it's density, temperature, and duration, according to the kind of char used in our casks. Light, Medium, Heavy and Extra Heavy char. The temperature will transform the organoleptic profile of the wood compounds, providing scents, flavours, and colors that our costumers search, for the maturation. The char process allows us to also caramelize the existent sugars in the wood and tranform it's aromatic profile.
Light Char
With the application of the Light Char in our casks, we extract a bigger aromatic flavour from the wood, producing flavours such as coconut and vanilla, as well as fruty flavours. It is mainly used for the maturation of wines, mainly white.
Medium Char

Heavy Char
With the application of the Heavy Char in our casks, we eliminate the aggressiveness of the tannins existent in the wood, producing above all, caramelized flavours. This Char is mainly intended for the maturation of delicate destillates.
Extra Heavy Char
With the application of the Extra Heavy Char in our casks, we obtain an interior appearance known as “The Alligator”. With this char we get high notes of vanilla and caramel, providing a magnificent dark amber
color. It is, apart from the Heavy Char, the most requested one for the maturation of destillates.
